
Homemade Chicken Patties

Hello Everyone! Time to munch on chicken sandwiches! Today I was craving fast food, but my wallet and my gut begged me not to go.
With a quick google search I found out you can easily make chicken patties with chicken breast! Who would've known (lol). I found a nice recipe that I loosely followed from Fox Valley Foodie (https://www.foxvalleyfoodie.com/homemade-chicken-patties/#recipe).
I won't post the full recipe here, but I will tell you how I followed along. All I really needed to know was how to keep the chicken in a patty form and the rest seemed simple to me.
First, I defrosted two medium sized chicken breasts and marinated them in a concoction of ranch, bbq sauce, pepper, black garlic salt, parsley, and just a squeeze of lemon. (I prepared the chicken before deciding on what I wanted to cook for dinner!) I happened to have some veggie patties in the freezer and cut up one along with the chicken, I added the patty and chicken to my mini blender, (I seriously love this thing!), and got to grinding it all up. At this point I was following the instructions to the recipe, aside from adding my own spices not mentioned in the recipe.
The chicken came out very... squishy? I wasn't sure what I was expecting, it looked just like cat food! I was confident about it regardless and scooped the chicken into a bowl where I added a bit more of the spices I previously mentioned.
Fox Valley Foodie formed their patties and dipped them in a mix of breadcrumbs, an egg, and Worcestershire sauce, some milk, and again into plain bread crumbs. I missed the part about adding an egg and didn't understand the milk, so I skipped that. I didn't have any breadcrumbs so I improvised by crushing up some fancy crackers I bought a while ago.
The meat was very STICKY, the bread crumbs helped a lot and kept the patties in some what of a circular shape. The veggie patty I added really added a nice crunch throughout the patties I made and I really believe it helped the chicken stay in place.
I heated up some butter in a pan instead of oil as Fox Valley Foodie did and cooked 2 patties at a time. I was able to make 4 patties! They came out nice and juicy, although I do think I could do better with bread crumbs or maybe more crackers as the patty was a little too... squishy, but very delicious!
Once done, I toasted some buns and sliced some tomatoes, goat cheese and onions, and squeezed some kale for our sandwiches. I ate mine with caesar dressing and my partner ate his with mustard.
